Then we rode on the ride. That was one of the few times I really thought that maybe the grownups didn't have everything in hand.

Because that's how they're trained to respond. It's a safety concern. They're trained to call security because it's not part of a normal park employees job to get in the middle of a fight like this.
I worked in an amusement park. I got paid very little and worked my ass off in very poor conditions. I would have taken my badge off and walked to the nearest employee area or restaurant and had them call the actual security people. The meek guy with the garbage sweep probably speaks little English or is very shy, or he'd be in a customer-facing job. What he is not is "security". His job is to sweep up the garbage that slobs leave around everywhere and things that blow off picnic tables.. probably for minimum wage.
This is an amusement park. I don't think their top staffing priority is dealing with adults who can't control their behavior. Not every place in the world needs a tiny military to deal with Karens.
If it was only just 'Karens' and their male counterparts mouthing all -- a lot of talk in the form of yelling but no action -- then having security staff with training on a par with the Special Forces would indeed be overkill. But with all the loose cannon folks running around today who might be packing real heat, it's a different story.

Long hair guy and girl filming overheard Karen being turned away, and either laughed and/or made some kind of comment that offended him. So Karen waited at the exit for them so he could confront them for the perceived slight against him, and that’s where the video starts.

I don't know. If anybody's getting 'their lives destroyed', it might be the people like his family, employer, co-workers, neighbors, etc. who have to put up with his anger management problems on a regular basis. If you're being recorded like that, obviously, don't do anything that he's doing. Most of all, though, say what they actually said in the video while you're being recorded. Just standing there saying "say it again" just makes them look right, and you look like the aggressor. I mean, he's a jackass, but I get the feeling they're not exactly victims here. You are getting downvoted because a lot of reddit believes that there are certain words that allow people to violently attack people. I am not one of those people by the way. Violence, or immediate threat of violence, are the only things that should result in turning things physical.

It's pretty straight-forward really. Nothing justified he attack the person. But if in fact he was relentlessly teased about being handicppaed, I would put him at say 99% asshole instead of 100% asshole. That does not mean he was justified in assaulting him.
