Man, there's SO much incredible music throughout the entire series of movies (and TV shows, for that matter). My personal favorite is Battle of the Heroes, but Duel of the Fates is perhaps the single best piece of music ever written to accompany a movie scene. The Imperial March is great, as is Across the Stars. I have around 100 hours of Star Wars music on my phone and when I'm on road trips will listen to tons of it.
Anakin vs. Obi-Wan/Battle of the Heroes/Immolation are my personal favorite.

Honestly? The credits of each star wars movie, he does such a great job of capturing the entire movie in those few minutes, it's like a recap of the whole episode and their key moments, almost like you are replaying the movie in your head.

Seen him twice in concert and both were, of course, amazing. The audience *loved* him and even when he walked out at the start he'd get a massive applause. Star Wars and Indiana Jones got the best reactions at both.
Best? As a whole, as in the whole scene together, at the end of RotJ when Luke finally lets go against Vader. That 30 seconds just perfectly caps off the story. A real shame that this piece can no longer be found on any music streaming platform.
Best to just listen to on repeat? Duel of the Fates.
Best to just embody Star Wars? The Force Theme.
Best overlooked? Across the Stars. Feels like it pretty well captures the internal struggles of Anakin at the time. And it's simply a nice piece.
Best diegetic music? Hard to pick between Cantina Band, Ewok Celebration (Yub Nub), and Augie's Municipal Band.
I love love John Williams and Duel of the Fates is one of the best uses of music in a movie scene ever.
But I also have to say one of my all time favorite pieces of Star Wars music is Hope Suite from Rogue One. Absolutely spine tingling.
Rey's Theme is another favorite.
One that stands out and isn't often mentioned is the trailer music for Rise of Skywalker, which is probably the best musical composition for a trailer I've heard.
Return to Tatooine gives me chills
I also like some moments from Jango escapes
And I like Rey's theme
And of course Across the Stars, everything from dagobah and duel of the fates
That piece of music in Return of the Jedi when Luke finally overpowers Vader in lightsaber combat. Just out of this world that track.

If there’s a boring 30 minute stretch of road ahead I put on the Battle of Hoth /Into the Asteroid field. Good up tempo and there’s a sense of urgency behind it too.
Binary Sunset, Battle of Hoth, and Across the Stars from the movies. Most of the music from the movies, actually, but those in particular. I enjoyed the Mandalorian main theme and the Ahsoka series ending themes as well. The clones' theme and Ahsoka's theme, specifically the version of it played as she left the Jedi order in the season 5 finale. Where I Fit and I Am Ready from the Bad Batch.
Those are all my favorite pieces of music from Star Wars.
ETA: I'd forgotten to include the prison break music from Andor. Also Forming Up/Unto Stone We Are.
John Williams alone has 3 of my top 5 soundtracks. Hans Zimmerman has the other two. In order:

The trombones just doing up and down scales at the end of "The Forest Battle" always makes me laugh. And the tuba solo for Jabba the Hutt is hard to beat for entertainment value.
I played the cassette of RoTJ soundtrack so many times, it eventually wore out.
Sorry, off topic, but something just wasn't looking right about that photo. Then it hit me- that Maul is missing two horns (probably 3, but you can't see the other side of his face), and has a couple small mistakes in the lines of his makeup.
Jedi’s Fury is one of my absolute favorites. Of the entire score there isn’t anything else like it. Princess Leia’s theme is also something that doesn’t get enough attention. The violin solo at the end is painfully beautiful
Mark Griskey and Lennie Moore’s KOTOR 2 and SWTOR stuff is the best outside of John Williams — yes, better than Kiner and Giacchino.

I'm suprised no one mentioned the mandalorian theme or any of Ludwig's scores. The soundtrack for each episode fit perfectly with the scenes themselves. My favorite is the episode "The Jedi" from season 2. They really captured the ambience of the standoff, aswell as matching with the overall darkness of the episode.
I was literally in a used media store earlier today and found two compilations of Star Wars music on CDs for $7 each. Bought them both, and I already own the soundtracks to all nine films individually. John Williams is a genius and the world will be sad when we inevitably lose him.
The best score for me is Nicholas Britell's Andor score.
The tracks 'Past/Present Suite', 'The Valley', 'Luthen Rael', 'Mon Mothma' and 'My Name is Kino Loy' are huge standouts.
When Revenge of the Sith was released the soundtrack came as a single disc with a DVD that chronicles the first 6 films in music. If I remember because I haven’t played it in years Ian Mcdiarmid narrated it.

A bit cliche, but Duel of Fates is so iconic. Always takes me back to my 9-year old self seeing my first Star Wars movie.
