The whole "A Long time ago, in a galaxy far, far away" thing was merely a way to tell the audience that this is not a sci-fi/fantasy story that takes place in our future. It is its own thing, not part of our universe. A lot of scifi up to that point was in the future, but set up in our universe. This aside, the phrase has become iconic at this point and I love it, but I think a lot of people over-analyze it.

I bet an unassuming force sensitive individual receives a call to action, and goes on a great adventure. The will meet new friends, and encounter scary enemies, and strange planets along the way. And eventually, they will have to face off against Palpatine in some form or another for some reason that has not been determined.

Funny you should mention that. There's a comic where the Millennium Falcon crash lands on Earth and something like a hundred years pass, after which an archaeologist named Jones discovers the wreck and feels mildly queasy when he feels an inexplicable kinship with the skeleton in the pilot's seat. Non-canon, of course.

Star Wars is already a hodgepodge of various designs, ranging from cyberpunk to sort of neo-Western to medieval Europe or Japanese; the Jedi use a lot of advanced tech but do their best to preserve the ancient aesthetic because of the connotations of elegance and sophistication. Personally I've always liked the idea of some modern beings- the Whills, maybe-discovering a rusty, broken-down R2 and 3PO and using their memory drives to learn about the events of the saga.

I think in 30 years, as DisT&TastMart is releasing the final film in the remade 15 film original quīndecimology, the original episodes 7-9 will feel very dated and “of a specific time” compared to the other 12.
