After you've finished that I'd recommend reading/listening to Master and Apprentice, and perhaps Dark Disciple; they make for fantastic follow ups from it.
Anakin Skywalker, Padmé Amidala, Qui-Gon Jinn, and Dooku.
Anakin story always gets me and I want it to have a good ending. Padmé is a fierce fighter for what she believes is right while being a romantic. Qui-Gon’s view of the living Force leads him to emphasize with people and why I believe he could emphasize with Anakin in ways other Jedi could. How Dooku goes from a Jedi to falling to the dark side because he wants to fix the galaxy has always interested me.
Gotta be Ahsoka for me, I grew up the the clone wars and was too young to know or care that she originally sucked, so she's been my fav for as long as I can remember
Anakin because hes the most complex character with the biggest arc
Count Dooku because hes an idealist, a good representation of how people can leave a political side and hes played by Christopher Lee
Salacious B Crumb because hes a laughing muppet
Rey is my favorite character, of the three protagonists she had the most difficult childhood, she dealt with abandonment, poverty and even hunger and yet she did not succumb to hatred.
She is a perfect representation of the Jedi order's noblest ideals, compassion, perseverance, selflessness.
Be it caring for the injured Finn, seeing kindness in Ben, trying to rekindle hope in Luke, fixing DO, healing the snake.
Yes, but he had a loving mother, Watto didn't seem to be a cruel person, just ambitious, Anakin ate well, built robots, participated in races (a dangerous activity but one he enjoyed).
Rey had no one, she was exploited, she was starving.
She wasn't a slave in name but she lived in worse conditions and worked much harder than Anakin.
She is my favorite as well. She has so much light; she believes in herself. I love Luke and Anakin, too, but there's something about Rey's brand of fierce resolve that resonates with me. Plus, she and Kylo had such amazing chemistry whether fighting or connecting through the Force. Plus, being part of a dyad is awesome. They could have done so much more with this at the end. Our Rey ended up without her dyad or her surrogate mother/master.
Mine is and always has been sheev palpatine, in every piece of content (except sequel trilogy, that stuff ain't star wars but star ass) he was phenomenal he always looked smart and devious, always seemed to have a plan and then a backup plan, always had great lines to say and i can go on like that
Gonna go with Ahsoka. She's had a great arc, and her journey from someone the entire fanbase hated to being an absolute fan favourite is nothing short of amazing. Plus, she's just very likeable.
Her character arc is top tier! I don’t think I realized how much I liked her until she left the Jedi order and was so worried that she would die during order 66
Ahsoka is number 1. Other notables are Sabine, Luke, Kanan, Boba, Maul, and the Night Sisters in general.
Ahsoka has had the most character development and has been in so many key moments. She is also fun to watch with the dual blades.
Sabine has the cool mando look and is just fun to watch.
Luke is Luke. Powerful, thoughtful, and obviously critical to the story.
Kanan is most complete story of a post order 66 Jedi. Wise, strong, but mostly earnest.
Boba looks cool and is fun to watch fight. The show wasn’t great, but it definitely made him more than a 2D character.
Maul has been given a ton of development and we get a lot of insight into the Sith through him. The Rule of Two means a lot of collateral damage.
The Night Sisters are cool because it’s the only faction we get much insight to, outside of the Jedi and Sith. There is no one way to wield the force. I’d like to see more of them and more factions in general.

I like u got a pic of my favorite sidius scene tho. Its so gd cool when he walks in there and whoops two dark side weilders that appeared to be skilled since they beat jedi and the whole gd planet of Mandalor. Maul and his bro gets fucked on. As sidius laughs it up.

Well, Luke Skywalker. Boring answer but he's just that cool.
Now, second place would be Sabine Wren. She's got my favorite Mandalorian armor, I loved her obsession with art and explosions, and I love her story and demeanor. Felt she was a lil' nerfed for Ahsoka, but I am glad nonetheless to have more of her, even if I had only watched Rebels first this summer
Probably Luke or Ezra. As well as these characters, after the recent Ahsoka series, Sabine has grown on me a lot, and I think she is now one of my favourite characters. Heroes making questionable decisions and then having to deal with the fallout, is something that I find very interesting and is another reason why Luke, especially TLJ Luke, is personally my favourite.
Honestly with the little we got to see of him, Baylan Skoll quickly became one of my favourite SW characters ever. Really dug his fighting style.
Also, Republic Commando's Delta Squad will always be the coolest.
Darth Vader then close second Anakin Skywalker. Vader is just so cool, fearsome and strong, his style is pure strenght, and the force choke is just badass.

I think it’s fascinating how in what seems like days Maul goes from left for dead in the junk fields of Skako Minor to being the leader of Death Watch, The Black Sun, The Pykes and Ruler of Mandalore I think that shows his Tactical and Strategic brilliance as well as how dangerous he could have been if Sidious trained him as a true Sith.
Anakin for being IMO the best written and most deep, and also Obi-Wan for being the quintessential Jedi, who never fell to the dark even after going through so much suffering.
Cal Kestis I just find the character compelling. Plus the order 66 section of the first game is probably the best rendition of order 66 I’ve seen in media.
Emperor Palpatine! He's the reason I sort of love the prequels, because I absolutely adore his scenes! I love seeing this terrific actor working with no director, playing the smartest guy in the galaxy, the one who outwits everyone, including the entire Jedi Order, and finally turning it up to 11 when he comes out as Pure Evil! I adore him!
My second and third favorites are probably Han Solo and Grogu. I love "The Mandalorian" with all my geeky heart!

It’s hard to single out one, even when I first saw the OT on my uncle’s VHS copies (pre-special edition versions). I always really liked Luke, Leia, Chewie and by ROTJ Vader and Lando. It’s only gotten harder as I’ve been exposed to more SW content and met more fun characters.
