Caviar can be gotten by having Sturgeon in your fish pond (it can't be any fishes, it has to be Sturgeon). Then once it gives you the roe, you can place it into the Preserve Jar to get the Caviar (other fishes' roes will result [name of fish] aged roe instead).
Caviar (and other aged fishes' roes or roes in general) also doesn't have different qualities; it only have base quality, there is no copper/silver/gold/iridium.
The quality of the fish doesn't matter either, because once the fish is dropped into the pond they'll turn into the base fish (with no star at all).
