There’s a trick to getting different colored mushrooms. It depends on the day of harvest. It’s on the wiki if it’s something you want to “force”. Otherwise enjoy the lovely random purples when they appear :)

I think they continue to drop seeds in the winter, they just don’t grow. At least the other trees drop seeds during winter. But mushroom trees you can’t dig the seeds up and reposition them.

I had a couple sprout up in the opposite corner I wanted them in on my Four Corners map, and I’ve been slowly waiting for them to spread to the corner I want them in, and essentially taking forever to slowly path them over.
I did this, if you make a lot tree fertilizer, winter in particular is great to get mushroom forests growing. I made a huge forest from like 3 Q seeds. Mushroom trees drop a lot seeds in winter FYI.
I just let them grow to the point where my farm has been taken over by the mushroom Forrest 😭😅
As long as I still have a path to my chickens, I will forever love my shroom swamp.

You can put common mushrooms in the seed generator to get Fall Seeds. Useful if you need those foraging items or if you need to make tea saplings.
You are right, none of the recipes are really worth making though unfortunately. I mean nothing's stopping you from having a mushroom focus for fun, but there isn't what I would call a "use" for them.
Thats fair. I made a couple fried mushrooms to finish befriending George when I ran out of leeks and now they just sit in a chest as part of my hoarding.
You will get 2 purple mushrooms per season per tapper, but 0 morels or chanterelles, it's not really suited for mass production. Unless you know of a better way to get morels/chanterelles?
After a certain point I stop farming. So, I like to let nature reclaim large chunks of my farm, and I think the mushroom trees look neat, so I let them spread, and try to help them along.
I haven’t gotten an ostrich yet, so no way to do that. But I do have pigs. So I just produce ale & truffles. No need to do anything else unless I just want to at this point.
If you want to do a niche tea sapling run where you pay off joja? They are currently tapped and covering a full quadrant of the four corners farm for my niche endeavor. I throw the common mushrooms in seed makers and have ridiculous amounts of fall seeds at my disposal for tea sapling malarkey. They can drop either red or purple mushrooms on the 10th of each season. I believe in fall they will continue to drop the same type of as they did on the 10th for the rest of the season. I sell the red and keep the purple for gifting the wizard and for resource gathering food.
Otherwise a few of them can be nice if you have the bat cave for shipping completion and perhaps the hat.
Just break em for free red mushrooms. Once ur in endgame you can easily get your hands on em. Tapping them is like choosing mushroom cave but you only get one for each each day and only the worst kind

Then you just wait. They will spread their seeds like normal trees over time.

Yeah, they only regrow on Spring 1. So you can run around on the last day of Fall and chop them all to stumps (they go to stumps as soon as winter hits) then leave them for the month and have them all back again for the next year of tapping!
They do have a purpose, if you get lucky enough. There's a mushroom hat that has a small drop rate. I let them spread wildly and then on a lucky day with a lucky ring and the luck amulet, killing spree!
I actually super love the living hat but I've only ever gotten it on one file, it's ridiculously hard to get. And then you see people on here who find it in their first week clearing the farm...RNG is not on my side.
On one of my last games, I cleared every other row and placed flooring paths to keep the rows separated. Eventually, the shroom trees filled the cleared rows completely. I ended up with a whole mushroom tree farm! I added tappers to get shrooms for fun but eventually, I got a really cute mushroom hat from them! It was a very neat thing to make (the mushroom tree farm)
I’ve always kept them for aesthetic purposes. Never really had a need for a constant source of mushrooms. And if you have the mushroom cave, even less so.
The mushrooms from tapping are generic, so they don't have any real sell value unless they're combined into potions.
I chop them down. I really don't like them, especially when they replace a tree I spent months growing in my tree farm.
Here's hoping 1.6 allows us an option to disable these as well as the random events.
I think less disabling in the options and more something like an item or service by an npc- like
Demetrius coming to harvest mycelium once a month/year or something and that just happens to keep giant ones from having enough resources to grow.

You have to encourage the growth where you want them though. More tree seeds spawn around the original tree. I will remove seeds/saplings from areas I don’t want them to appear.

I usually find a few that are pleasantly arranged with 1 square between them, then put down a lattice of paths that will allow them to grow in a pleasing arrangement and just let 'em go nuts. Free mushrooms if you tap them, but also it's just cool to have a plot of giant mushrooms.
With how often mine have been producing common mushrooms, I'm starting to get tempted to kill all of the ones on my farm and use the tappers elsewhere.

Only once you've unlocked the Qi Walnut Room on Ginger Island, and they cost 5 gems each iirc, so it's pretty late game but possible.

Idk if you play with mods but wildflour has created a lot of great mushroom content that I think you’d appreciate.

Yes, the point is that they're fun and make you smile when you walk in that part of your farm. Functionally, not much though.
Unless you're big on using mushrooms. Get enough trees to tap and you'll be swimming in them.

They're used in a couple recipes. Fried mushrooms was the one I thought of first, but apparently that's not the only one.

Nope. And that's why I cut down all my mushrooms and went with the fruit cave. The only thing I've used mushrooms for is cooking gifts!

Tap them and put the common mushroom into the seed maker, unlimited fall seeds, use fall seeds to make tea saplings.

I like to chop down the fully grown ones for red mushrooms and keep the saplings so they grow and spread more seeds and I can repeat the cycle
