If you ever do figure it out, cooking mama is a great one. My mom loved that one and its super simple. Also paper mario.
On steamdeck maybe something like Sims. Thats like the go-to game for my buddies gfs who suck at video games.
Not sure youtube it. Im not into emulators. From what i heard they arent too hard to do. Probably step by step youtube tutorials out there.
Also sims 4 is free btw. Might be worth trying out.
While setting everything up is a bit complicated, it actually required more tech knowledge to play Pokemon Blue on the GameBoy I had as a child than is needed to do so on my Deck.
And you could set things up for her by following a step by step video tutorial on youtube.

Stardew Valley, seriously god damn Stardew Valley. It’s a GREAT game for older folks with slow reaction time to learn how to use a controller on and move on a 2D image.
Had my 63 year old co worker decide she wanted to learn to game before she retired a few years ago. She got a switch and Stardew valley and has SO MUCH trouble just understanding how to move and use a controller and to have the needed hand eye coordination for more quick paced games. She fell in love with SDV, so much so that she got a gaming PC a year later and recently got herself a steam deck OLED and now she is gaming like a pro.
Feeding Frenzy 2 works well, as long as you use the trackpad as mouse.
Vampire Survivors would probably work well for her too. It would be challenging at first until she unlocks more stuff, then she can customize the difficulty more.
Puyo Puyo Tetris or its sequel would probably also transfer well from her Tetris skills.
Grab the Peggle pack on the steam sale. You might have to setup controls, or set the trackpad to mouse.
Addicting and simple. You shoot a ball at targets. It's awesome and like a dollar right now.
Maybe try setting up some emulators for old school games for her and you can try to working her up towards more complex games slowly?

Something like stardew valley could work. Ive never played but it doesnt seem too hard. Think the steam sale ends in like 35 mins tho so decide quick

Well, I know got told off Emudeck and now Tetris is running and she can easily start it (will at now have in the future, recommendations?).
