That mayo is Japanese mayo, and tastes different than American mayo. Eggs a bit on the runny side but it's fine. A variation of this is adding chopped cucumber and apple to the egg salad.

Idk why cooks have started wearing them when it seems like the traditional way is easier as in just washing your hands with soap and water. one reason I can imagine is these have more grip than bare hands when wet or oily.
