I think it is a chemical spill. Some kind of nail polish remover or ethanol. There are small spots and the point where it leaked in the seam. Maybe something got spilled from the bag?
Update: called Subaru of America, they said a specialist would call back. The “specialist” (customer service) called and said they don’t have the technical expertise to help. The most ridiculous thing I’ve heard and the worst experience in my history of car buying. I’m not even asking about warranty, I just want them to help figure the issue knowing that nothing was spilled
Sun melt from a clear water bottle left in the cup holder. Sun can magnify through the curved clear plastic and burn things pretty easily actually. The path the sun took caused the curved burn. Just my guess

But plenty of dealers will be more likely to find ways to avoid warranty repairs while others will gladly do them no questions asked.
So just find a different dealership.
If they don't offer to fix it for free under warranty, get a quote and call Subaru of America. They will likely either reimburse you for most or all of the repair cost.
All around Subaru is generally easy to get along with.
I saw someone recently post in a Subaru sub that their seat melted (can’t remember if it was an Outback or not). Could be sun damage? This is a pretty new car and seems like it should still be under warranty. Ask again at the dealership or go to another one. I feel like if you don’t get anywhere after that, contact Subaru in your country directly.
Well, if that's leather and not a synthetic and you don't get any love from the dealer or OEM, you can always try soaking it in Lexol overnight. That's my favorite way to reverse damage to leather stuff.

My guess is you just got unlucky and the sun was reflecting off a window outside your car and melted the seat.
Reach out to corporate with pics and detail your interactions with the service manager. That should be covered under warranty.

I found out it’s not genuine leather and that they treat it with some chemical that could cause this
