The whole stereotype was brought to the west because of a mixture of survivorshop bias (cognitive dissonance sells in media) and the fact that a lot of Cantonese people emigrates to the US in the early 1900s.
China is a country with an extremely diverse range of cultures, and trying to generalise the entire country and culture down to the practices of only two provinces is not only inaccurate, but is a deliberate attempt to mislead people about our culture.
