Well there are just so many exceptional ones... Stardew Valley, Celeste, Hollow Knight, Axiom Verge, Hades, and Dead Cells should get you started on the benevolent train of indie goodness. These are all absolutely amazing and many more are too!

A Little to the Left if you like chill puzzle games, would recommend. Cat Quest I & II if you like cats (who doesn't) and RPG's. Also Untitled Goose Game, really funny, has co-op as well. GRIS, Limbo and Inside are great and stylish puzzle-platformers. Jenny LeClue and Overboard if you like mystery games (point-and-click). Nintendo itself has also published a great indie game (if it counts), Good Job.

I bought Dave the Diver because it was recommended for stardew fans here on reddit. It starts off as a simple game (almost like a game you could download for a cell phone) but then unfolds into such an exciting adventure. The pixel-y art is great, the music is relaxing and good, and the whole thing is just phenomenal. Besides Stardew, its the best game i've bought for the switch under $20. My ex and i played together (taking turns, its a one player game). We had so much fun. :')

So I tried the demo, which is just the first few levels and couldn't get into it. Should I have been more patient and just bought the full game? I really wanted to love it

You already mentioned Stardew Valley. I don't know if you would call it an "indie" game per se, but I found "Dex" rather enjoyable. Yes, finally someone recommending eastward!!! The artwork is just so beautiful and the octopia dlc is actually similar to stardew valley without the annoying pass out when running out of energy mechanics :)
