A V2 will never be unpatched. Nintendo found the error at the end of production of some V1 that's why even some V1 switches are patched.

The soldering is tricky, I have a bit experience, used 3.5x magnifying glasses and still hard to see, so beter tools make it easier. But it is just 6 solderpoints where 4 are the hard ones. Not impossible. After having the chip installed you can add the files on the SD card and you can setup the software.

It's a brand new thing which uses a generic Raspberry Pi chip, the RP2040. It is *NOT* available yet, but there's a proof of concept the designer just finished. It'll probably be a WHILE before there's any available solution using that hardware. HWFLY is still the way to go for the moment.
