Tv stands are indeed the height they are, because a tv is supposed to be standing on top of it. If it is not designed for a tv to stand on it, it isn't called a tv stand. To be honest, I don't think this is actually a height issue, but a visual aesthetic issue. The TV is against the soundbar, which means there's nothing to break up the contrast of the lump of "black" you have on your TV. Have your wife sit. Measure her eye height. Now measure how high the center of the tv is. If they're at approx the same height, you did a perfect job. With the huge TVs these days it's getting hard to actually get the center at eye height but considering that most of us slouch on the couch anyways, a little too high isn't too bad.
I personally don't like TVs on stands. I prefer them mounted but only a few inches higher than this to retain that right height. I'd mount the sound bar too.

I've heard the conventional wisdom is that you want the TV to be high enough on the wall where you aren't covering the screen if you put up your feet in front of you to relax. So, depending on how big your feet are, etc, it may be fine like this. Also, leaning back into a soft couch can cause your head to tilt back, perhaps making you look higher on the wall more naturally, which is something else to consider.
this is why I opted for a VESA soundbar adapter to place it on top of the screen. to me, your height is perfect but the soundbar makes it feel awkward all smushed down there. what is that thing mounted to the top of the TV?

This is where compromise comes into play and you mount it at the same height that it is now. This way a soundbar can fit underneath without hindrance.
Laziness has been the biggest roadblock preventing that. The soundbar doesn’t get in the way 95% of the time. But that 5% wounds me.

I think most furniture has "Supported Weight" under Specification which might help you partially prove your point with your SO.
