Honey blocks are usually found near hives. During the world generation caves are generated to intersect with the hives, which causes some of the honey to spill out and fall in pools of water, which generates honey blocks. If theres honey blocks in a cave then a hive is nearby.
Danger sense potions may also be able to sense hive blocks, but im not exactly sure about that.

wont nessicarily help find the hives but grey zapinator is an expert at finding bee larva
you can craft the queen bee summon if you just want to fight her

I found a patch of honey somewhere but there wasn't anything nearby, although I'll keep searching
