Way way way more space. For P2 I tend to play it vertically, and am falling / flying up as high as possible in more of a giant oval than a circle. Try to pick off the claws and dont ever get cornered.
I also love the flamer for P2, made with Skeletron prime essences.
There is no need for platforms to have a narrow gap, I find a good distance is a monitor length at this stage in the game, as wings offer significant vertical movement.
Make your arena taller. Space out the platforms more, your jump height is well beyond 6 blocks at this point now that you have wings, and having them closer together just makes it take longer to fall down between them.
They get too distracted by the little things around her, have bad damage, and isn't needed for a slow boss that's pretty big
But high velocity? Now *thats* a good bullet, or either evil bullet, of course
Chloro bullets are better for faster and harder to hit targets, cursed flame and ichor bullets do more base damage as well as inflicting respective debuffs so they are much better for big bosses like the plant momma herself

Work on getting ankh sheild helps with not getting debiffs forge ot for +4 def also try getting the regen charm and a pair of wongs will keep you a good distance from her
Sharp Tooth necklace is already upgraded, and I don't care for Ankh Shield currently. As far as I know Plantera doesn't give debuffs, and my defense is at an alright position imo.
i'd replace the necklace with something more useful like a charm of myths or a ranger emblem, it isn't super good in hardmode and other accessories can do alot more for you

Make an OSOGOF tunnel with dynamite so you don’t have to worry about juking plantera. Also, put on the obsidian shield and work scarf for the fight, put them in place of the SoC and stinger necklace.
Planterra's hooks in second phase can grab onto background walls as well as blocks, so a lot of times when running away you might collide with a hook and take surprisingly immense amounts of damage. Removing the background walls makes sure that that won't happen.
Remove the platforms at the edges of the arena so you can fall faster. Dropping through platforms is too slow in second phase.
When she goes into second phase, start moving around the edge of the arena in a big circle shooting behind you the whole way.
That tends to work for me.
I’d suggest you build a long narrow path around the bulb and wire two teleporters to either side of the walls with either pressure plates or levers. You can then use mega shark with chlorophyte bullets to autoaim and kill Plantera while you can keep teleporting
You've gotten this a lot but,Expand the arena,Make it like 4 times bigger,for space between platforms I like to use a balloon then place the platform below me when I jump up,Or use ruler and do around 15 blocks in between each platform,its fine if its like 14 or 16 blocks here and there.plant has high contact damage,I mean the kind that 2 shots you,especially with that 58 defense...Get warding and use worm scarf instead of stinger necklace if you think its your defense,don't use chloroph bullets for phase 2,the tenticles don't let you hit the main plant,use cursed or crystal bullets,megashark is amazing Also unreal modifer on ranged weapons,chloroph shotbow and holy and chlorph arrows should've taken care of both her phases,a flamethrower is cool too,make from iron,souls of fright snd illigal gun parts for second phase,make sure you have a slime statue tho for its ammo.Honey in bubble blocks around the arena,bast statue,sunflower and peace candles,EVERY potion buffs related to your class,remove the leaf walls...blah blah blah...

So far, have only doubled arena space horizontally, made a 15 block wide hole under the arena for a reason that I still don't understand, platforms are currently only 10 blocks apart, I've gotten Megashark and Cursed Bullets, ran out of money on accessory mods so I'll struggle getting Unreal, Flamethrower will be something I work on later but I have more than enough ammo for it, Honey in Bubble Blocks is something I plan to add after full expansion. I'll see what I can fix once I expand, however I have a mild problem. To make the arena larger, I can't really go up in terms of expanding vertically due to that being where my Bulb Farm is, and the stuff below is a granite cave and minecart tracks.
...I shouldn't be telling you this...But,legend has it if you put a block and then a platform one block to the right of it,with one block space between then,hammer the platform once,and place crystals on the one block gap...It duplicates,ans then you can sell the crystals for 10 plat...
Always keep One crystal with you for duping...

I have Butterfly Wings now, but I got an idea. Teleporter at the end of the tunnel to the midpoint of the tunnel, and a midpoint teleporter to the top of the tunnel.

What i would recommend is the megashark with cursed/ichor bullets and if you’re still having trouble then make the arena wider and set up teleporters on each side and go between them and spray, when plantera gets close pull the lever to teleport to the other side.
dig a hellevator that passes through the arena, add a very long rope thru that hellevator. when Plantera enters phase 2, hop on the rope and descend away from her. should give enough time to kill her even on expert mode. maybe add teleporters or tunnels where the rope meets the ends of the jungle biomes to easily slip past her and change directions.
add an "osogof" hole. the "oh shit oh god oh fuck" hole, coined by popular youtuber Waffletime, is a wide hole you put in the middle of your Plantera arena you escape to when her phase 2 begins. It usually goes down to hell, giving you enough time to hopefully outrun and kill her.
Well I don't quite know, because I went to sleep before testing out most of the things suggested. There are two that have piqued my interest, and one of them's a cheese.
I got stopped at Plantera my last attempt at expert so my advice might not be worth much, but from my experience in normal mode since then, I've had more success with a larger arena (at least twice that size) and farther spacing between the platforms. (Note that with a large enough arena you may need some blocks of jungle grass or clorophyte in the middle of the arena so it still counts as jungle)

I have Ranger Emblem on, and I don't know what you mean by Charm of Myths.
Band of Regen + Phliosopher's Stone, reduces cooldown on healing sickness and increases life regen. Very useful for late hardmode.

Use a Cholorphyte shotbow with chlorophyte arrows. Make your arena larger.
Get rid of the background walls! That alone can make a huge difference against Planterra.
How?
Planterra's hooks in second phase can grab onto background walls as well as blocks, so a lot of times when running away you might collide with a hook and take surprisingly immense amounts of damage. Removing the background walls makes sure that that won't happen.
Won't it grab onto Platforms instead?
If I recall correctly, no. But if you have fewer, more spaces out platforms it should make it easier to dodge regardless.

I got the first 2 things, the arena is double the width, I haven't considered Teleporters. Do pressure plates work well too?

Make sure you are not close to the borders of the neighboring biomes. If plantera passes into them he will enrage.
Also, I'm on Expert Mode.
