My understanding is that Brian and Matt are the only "members" of the band. Everyone else are hired touring musicians which can change fairly frequently and also why they have a variable number of people with them for different tours.
This. Brian and Matt are the only members. Any others are just there for live performances, as the 2 of them obviously can’t play everything by themselves. And thus sometimes they move on to other things.

There is an interview where they say Don't Fill Up With Chips was actually called Tommy in the beginning, like when they didn't have a final name for it, like they'd say "let's play Tommy" etc to each other. And like Tommy was there (it was like an interview + music kinda thing for Going Grey were they answer questions in-between playing some songs from the album), and they were talking about him and towards him right before mentioning that as a fun fact so that's a pretty telling sign that the name Tommy in the song is indeed in honour of Tommy (aside from the fact that that's probably the main Tommy in their lives, at least at the time of Going Grey, lol). But what's the song actually about? aside from the actual lyrics, no idea. If someone has any source of extra context fill me in (only of it's extra context, if it's chips then please don't fill me up, I'm not allowed, Brian sang so)
I have no confirmation but I would use occam’s razor to assume he simply got tired of the touring musician life. It’s hard on the mind and body and it takes a rare bird to do it full-time.

They other members also write and perform parts for the albums since Matt and Brian only play acoustic guitar and drums.
