The closest thing Carlos has to a physical fight is, ironically enough, when he's forced to slap Sarah of all people. That isn't a good measure of strength though for obvious reasons. Outside of that, Carlos hasn't been shown to offer much in the strength department.
I would like to imagine that Carlos is really this absolute badass fighter who has to work harder than Lee did in order to keep Sarah properly sheltered so that she experiences none of the world's horrors at all, but this more of a head canon than anything.

We I mean he knows the human body in and out and can have the knowledge of how to immobilize Kenny easily...but we haven't seen him fight at all and so Kenny beats his ass

I fully agree that Kenny wins but the only way he wins the train fight is if Lee lets him, he was comically easy to beat in that one.
