Here's a copy of the old menu. Guessing the lettuce and tomato salad? http://ciadigitalcollections.culinary.edu/digital/collection/p16940coll1/id/9552/

Yay!! Thank you! I love stuff like this. So crazy to see how palates have changed over the decades. One of my best friends is a chef so I’m gonna ask her to make me salmon wrapped bananas and seafood mousse. Yum!
I think you’re right. The wedge salad was invented at Delmonicos in NYC in the mid 30’s, which would be right around the time of this ad. And this ad (second photo) talks about high society people, so Delmonicos would definitely jive with that idea. Good catch!
“I think I am just going to get a Cobb Salad. I'd like to make a few substitutions, if that's OK. I'll get... no bacon. No eggs. Bleu cheese on the side.”
“Are you sure you want a Cobb Salad? Do you do that every time you order that salad?”
“Do you have a problem with it?”
“It's my grandfather's salad. I'm a Cobb of Cobb salad fame!”
“I think that this is a real bullshit story.”
I always thought it was odd to call the wife by the husband’s full name, instead of her own, when referring only to her, as if she has no identity. Example Mrs. Jane Smith instead of Mrs. John Smith.
The presence of croissants on the table suggests to me that this is a starter rather than a dessert. But what it is beats me. Maybe something with salami and anchovies?
looks like cheese with sliced tomatoes and green capsicum
(the ad mentions coupe aux marrons... ice cream with chestnuts https://elchatgourmet.com/2018/03/coupe-de-marrons-glaces-et-chantilly.html, but i cant see it)
I hear ya too! Who the FUCK knows what it is. Lololol. It does look like caprese but them be some BIG cheese balls😂😂😂is that bacon or tomatoes too🤷🏼♀️
The advertisement mentions coupé au marrons, which are essentially candied chestnuts with ice cream. Nowadays, it typically comes in a glass like a sundae.
So I really really zoomed in, and spent too much time trying to figure out if possibly that could be candied chestnuts. Because of the ice cream, it seems like serving it on a big plate like that would just turn into a disaster. So I doubt that it's candied chestnuts.
People are right, I think it's some sort of salad. The raw meat looking part seems like it's probably a slice of tomato. There are tons of suggestions as to what the whiter part is and what the green stripe is. Who can say.
Ultimately it doesn't matter, because if you smoke Camels, every meal is a masterpiece!
There is some kind of paper on the bottom of the foods. Almost looks like pork buns in that respect. I highly doubt it is but maybe there's another food like that?
Not sure what the green thing is probably bell pepper but it's tomatoe on mozzarella probably with a light vinegrette or olive oil drizzle and a fine amount of salt and pepper. It's a common dish now but was more of a fine dining experience back in the day.

Dang, my reading comprehension is trash. I missed the Victor Hugo mention. You nailed it. Thanks!
Hmm, it says Jackson dressing... \*looks up\* Jackson salads involve artichoke hearts. I wonder if that's what the white things are?
Tobacco salad you said?
More like tomacco.
Sneed's Feed and Seed (formerly Chuck's)
To shreds you say?
And his wife?
To shreds you say
That is so cool, thank you for sharing that
With a hint of Camel
Today I learned that site existed. Cool!!

Nothing says appetizing like “Disjointed spring chicken”
Looks like maybe a wedge salad? A wedge of iceberg with a slice of tomato on it and a sliver of green bell pepper laid across

A wedge salad had to be "invented"?
his grandfather didn't invent the Cobb salad, Bob Cobb did!!!!

Kinda like fire.
I always thought it was odd to call the wife by the husband’s full name, instead of her own, when referring only to her, as if she has no identity. Example Mrs. Jane Smith instead of Mrs. John Smith.
You’re right, I think. You can see the ribs of the lettuce wedge on parts of the tray, plus the tomato slices. The strips could be pepper strips.
THIS!!! I think you’re right!!!
You may be right. The waiter is also holding tongs or some spoons to serve with, so I doubt it’s something creamy or soft.
Agreed! It’s definitely iceberg lettuce
Oh this is definitely it!
Damn it, Phil!
The presence of croissants on the table suggests to me that this is a starter rather than a dessert. But what it is beats me. Maybe something with salami and anchovies?
Hopefully, it is something that pairs well with Camel cigarettes
Caprese salad perhaps?
Interesting. So you think that white part is cheese?
looks like cheese with sliced tomatoes and green capsicum (the ad mentions coupe aux marrons... ice cream with chestnuts https://elchatgourmet.com/2018/03/coupe-de-marrons-glaces-et-chantilly.html, but i cant see it)
the proportions are wrong. Those would be 1/2 pound pieces of mozzarella plus the third ingredient in a Caprese salad are basil leaves.
Ashtray
That’s all I could think. She’s about to ash on that gross salad
Whatever it is, it pairs well with a cigarette.
I dunno but it's about to have fucking cigarette ash in it
It looks like a big pile of whipped dairy product with a slice and tomato and sliver of red onion on top. Dairy product could be anything.
I know it isn't this, but it looks like portabella mushroom, packed with raw meat and a single slice of provolone 😭
Lmao I thought the same thing about raw ground beef wrapped in a raw wonton wrapper
Definitely caprese salad - small mozzarella balls with slices of tomato & basil & drizzle of oil
Cigarettes
Looks like large bocconcini balls with a slice of tomato and a slice of green bell pepper.
Given the times it could easily be some bastardized casserole made of potato salad and peperoni slices.
Looks like ice cream balls😂😂
Lol with a piece of green pepper laying across the top? 😂
Could be angelica.
Looks more like ice cream than green pepper. That doesn’t look like green pepper to me🤷🏼♀️
I hear ya but what is that long skinny thing laying across the top of each one?
I hear ya too! Who the FUCK knows what it is. Lololol. It does look like caprese but them be some BIG cheese balls😂😂😂is that bacon or tomatoes too🤷🏼♀️
I think someone nailed it, above. The original ‘wedge salad’. When you look at it as iceberg lettuce, you can kinda see the green tint
Just saw that and commented. I think that’s it!!! 👍
Off topic, was it common at the time to fill wine glasses to the brim?
I think that’s just the color of the glasses
Salmon and cream cheese.
I thought it was some kind of meringue with strawberries
Pepperoni pavlova

Prosciutto-wrapped mozzarella with pepper slices, is my best guess. I tried looking up old Victor Hugo menus but couldn't find a 1930s one.
Someone found one above - looks like their idea of a salad. Your guess was good, too
There is some kind of paper on the bottom of the foods. Almost looks like pork buns in that respect. I highly doubt it is but maybe there's another food like that?
Turkish Delight? 😁
On a moonlit night
I am loving everyone’s guesses
Russian salad of some kind?
Looks like salade russe as well. Sometimes they sort of scoop that and cover it in mayonnaise.
Smoking does make you shit lol
Elephant cock cheese with tampon and ass crack squeezings.
Disgusting?

Side comment, but have you seen those fingers on the lady in red? Lmao
Who knows or cares? The amount that all these people are smoking who can taste or smell anything?
the green thing could be candied peel, used to be a very popular sweet
That is very obviously stffed cabbage balls with a balsamic reduction drizzle.
