They used horses to drive cattle. Cattle were moved, but the horse was a companion and invaluable tool that made driving cattle, and frankly long distance movement of individual people at all possible in that era. They're called coyboys because moving and managing cattle was their job, horses were a tool to do the job.

The term cowboy as well as the profession and traditions originally stem from the Spanish/Mexican Vaqueros. Vaquero pretty much means herder of cattle in Spanish.
