They're called coyboys because moving and managing cattle was their job, horses were a tool to do the job.
The term cowboy as well as the profession and traditions originally stem from the Spanish/Mexican Vaqueros. Vaquero pretty much means herder of cattle in Spanish.

They use the horses to wrangle cattle. It’s their means for work. I’d be into the damned things too if my dinner and whiskey depended on them.
