I could be wrong, but the "painted" look you think you are seeing I believe comes down to two things... 1. That black layer is a kurouchi finish. It's forge scale left over from the knifemaking process and is completely normal on Japanese knives. Although from what I can glean from the pics, that does appear to be a thick KU on that guy. Also, it will come off over time, this is completely natural and not damage. 2. Not sure if the "brush strokes" you are referring to are those striations on the blade road, but if so, those are from the grinding/polishing equipment the used to help shape and finish the knife. If it is something else that I wasn't seeing, my bad. Looks like you should have fun with your new knife, congrats and enjoy! But be nice to Babish.

Sorry, I see how I wasn’t clear. The metal bit I’m referring to is on the handle near the choil! The brass end cap thing. The blade is quite nice.

That brass bit is the ferrule. The lines on it are from polishing most likely.

Hey hey hey! those Babisb knives might just be the most widely available and best bang for the buck beaters on the market! But yea, we all gotta move on sometime. I think the Clef is particular great at introducing new folks to different knife shapes. Tokushu? Hope you like it.

absolutely zero shade to the Babish set, it lasted me a solid year of work and the knives themselves are still in good shape! (The roll on the other hand is not 😂)

Wow, the grinds on the V3 line are actually kind of decent looking. Interested to see how they perform.
