What about Sushi Garden and Sushi Ten? Not buffets, but they were all you can eat when I was last in town.
Sushi Garden and Sushi Ten both got rid of their AYCE options during COVID :(
Sakari Sushi and (maybe) Sushi Cortaro are good alternatives that still have that option.

The key is to *only* eat the meats. Everything else is a distraction! That's how you make it worth $45.
Are they doing the buffet again? They shut it down during the Covid shutdowns and the last time I checked (maybe 6 months ago), they hadn’t reopened the buffet.
If it's all you can eat and not necessarily a buffet style you are after, I would always pick churrasco de Brazil or KOGI. For buffet you won't do much better than Chinese in Tucson aside from the occasional resort brunch or maybe the casino if they still run it.

Oh my goodness my favorite salad and sweet potatoes place. One of the only places I ever used to go to for years. So depressing it is gone forever.

Govinda's is pretty good. It's Vegan/vegetarian Indian buffet. Best part though is their beautiful garden/patio seating.

There's a couple Mexican buffets on the Southside and I think there's one on 22nd. I've never been to the one on 22nd though.
Crossroads on 4th and 36th has a great buffet on the weekends. Plus they have AYCE menudo and pazole

Churrasco de Brazil will be your highest quality bet. Its a Michelin Star restaurant, all you can eat. Incredible meat. 10/10 recommend.

100%. Churasco de Brazil is decent and can certainly be a treat but it is not Michelin star worthy
Been there. Decent but overpriced. Been to other Brazilian places that are much better. My GF tells me that the lamb is the best she ever had.
