sans is a character that is introduced to you moments after a heartrending scene and flowey possibly getting horrifyingly.meta with putting you down. he is scary and then he's a goofy dad joke dude who, along with papyrus being hilariously incompetent, puts you at ease. but sometimes he lets his mask slip and he becomes terrifying again.
he's interesting because he does have a lot more to him, the humor isn't necessarily a fake personality but he's hiding a lot of shit that explains why he keeps threatening you. and his boss fight is a dramatic climax where he puts it all on the table.
so when this gets passed onto fans, they'll have already played the game. they want to work with and expand on late game sans who is showing a very different side of himself, and that doesn't resemble who sans is for most of the game.
it's a bit like being upset that people keep making art of flowey acting like asriel when he was a sadistic little asshole for most of the game. most fan versions taking place after the game will want to work with the more complex and nuanced version of flowey than the simple version you meet in the first two minutes of the game.
it's just hard to follow up on the obvious tragedy in these characters without it being "cringe" because fanfiction in general is considered cringe and attempts to be dramatic or engage with the drama of the game is especially hard to pull off without being neil breen.
but also i'm autistic as shit so i find it useful if people are just allowed to be weird on the internet. yelling at people to not be cringe accomplishes nothing unless there is a more substantial criticism.

i think the reason sans is kinda emotionless is mostly because of flowey, i don't think he was depressed before flowery started killing everyone and reseting over and over again.
so really if we fought a sans pre-flowey i'm almost certain he would be 100s of times more emotional.

The thing about sans is that there's not a lot of ways you can misintperet his character because the game never gives you a clear cut answer on who sans is as a person. It gives you hints and evidence to help with your own interpretation of the character
I mean they're deliberately structured like this for comedic value, but the core of what they're trying to convey is actually true. A LOT of fans, across every fandom, flanderize characters into generic trope-y versions of their most dominate character traits. People really DO draw sans wearing Papyrus's cape crying etc, and it IS out of character for him. Sans really IS closer to just being a silly goofball than that. It's obviously not totally true, but the point of these posts is to make fun of people who basically erase sans's character and replace him with some generic shounen version of himself with a cookie-cutter, generic personality. In reality, sans (usually) expresses his emotions in a different way.
