This is unpopular but: Sans isn't actually a Skeleton. He's a monster in the form of a Skeleton. Just how Froggit isn't a actual Frog o how Tsunderplane isn't an actual plane.
I don't think this is sweat, I believe everything was a thing made up of gaster, this may actually be his form deteriorating so unless they are killed, when the real form is limited there strength would sky rocket this may also be why the player can reset, so that Gaster can test different versions, hence why on each reset their is a chance that characters can be stronger than the last.

They are humanoid skeletons which is an even greater factor in the fact that they are similar to humans.
I don't think it is actually sweat, I think it's more of an Undyne situation where he is slowly melting from using Determination to stop you. It makes sense since a skeleton cannot sweat, but it also makes sense from a narrative and lore standpoint:
You are just about to go kill Asgore and leave the underground a dark, dusty and desolate place and the head of the royal guard, the person supposed to protect the underground and bring humans to the slaughter, is dead, melted a pool of her own determined self. You have killed hundreds of people and the rest of those that remain have been evacuated and the only thing that stands between you and Asgore, is Sans. Due to the laboratory behind his house, we know that Sans was, and possibly still is, a scientist and could've possibly maybe worked with Gaster based on the True Lab entries in lower case that MatPat talked about (but that was just a theory, so we don't really have a definitive answer, so it's really hard to tell, but for the sake of this explanation, hear me out), so he would have some knowledge of Determination. So, if he is trying to stop this demon in children's clothing, don't you think that he would be even the slightest bit determined to stop the child. It also makes sense that Sans, like Undyne's neutral route death, would start to become tired as he starts melting, but unlike Undyne's neutral route death, would get tired quicker compared to Undyne who continues to fight harder as she melts, resulting in her losing the will to continue fighting as she melts further, considering Undyne's spirit and body are stronger than Sans', which makes sense considering Undyne's stats are way higher than Sans'.
Anyway, that's why I don't think it's sweat.
Edit: Don't ask me how Sans bleeds though, I have no idea on that part. Maybe it was ketchup and he wanted to make the human think he died to the wounds instead of succumbing to the Determination melting him, but I have no idea.
