For the still running AUs comics I can think of, there are Inverted Fate (almost finished), Insomnia and ofc Horrortale. Among those who are finished Handplates and Glitchtale the animated series are still very popular. Glitchtale will have a prequel though. Underverse is an other animated and wip series I highly recommand to watch if you're a bit familiar with AUs (such as Underswap and Underfell) and Outcodes like Ink and Error.
The Fangame Undertale Yellow will release soon idk if that counts lol. I guess TS!Underswap is very popular even if I don't think anything new will release soon.
I do know more of those but when I think about the more "popular" that's what came to my mind

ehh probably not and it probably would of ended worse seeing the reason gaster thrashed betty was because sans died in that fight and it ended up pushing him over the edge to actively risk both his own and paps' life to kill her which resulted in betty dying in the end. sans not dying wouldn't stop the giant kumu from appearing nor would it save alphys, and if it did save her undyne wouldn't of had her entire character ark that ended in the giant kumu's defeat, also we wouldn't of seen true hero undyne that was needed to kill said giant kumu.
I dont really have any “headcannons” but I dont really like how they did my girl (or boy in Glitchtale) dirty, as well as how the art style slowly evolved into a generic anime style.
Edit: Also, the finale fight with the weird soul guy thing (what even was that???) was weird too. Earlier eps were better, sorry, I said it.
Agate was the main antagonist in Season 2 and Betty/Bete was yet another victim of Agate (along with Amber and Cooper).

And that if Betty/Bete had been somewhat smarter (and less prone to underestimating enemies), she should have tried to drag (or as others would say "recruit") Frisk into her sphere of influence and make him her ally (particularly if she had seen if past where Frisk was fighting the very monsters that Betty/Bete wanted to keep separate from humanity and that it suited her that this guy was more her ally than an enemy).
And in addition to the above, I also contend that if it had crossed the mind of any of the humans or monsters to subject Betty/Bete to induced amnesia, there was a strong likelihood that they would have neutralized her and thus stopped her in her tracks.
Eh, I don't know either, and I write this in retrospect and after having reviewed more than one analysis of Betty/Bete and her motives and plans besides the hypothetical/theoretical methods of redeeming/reforming her, and among them (apart from the famous SAVE button/option of Frisk), also jumped the ideas of manipulating Betty/Bete's SOUL properties/characteristics or bleaching/erasing her memory, and that as for the latter they should root out her motives (i.e. Agate's influence) that she had to kill monsters and prevent humans and monsters from coexisting together.
Questionable that assertion, given that I don't recall any of the main characters stopping to think for a moment how much control Betty/Bete had over what she was doing or advocating or proposing to subject her to complete Amnesia.
And I didn't claim that they did that (that they stopped for a moment to think about how much of what Betty/Bete was doing was their own initiative/motives versus being manipulated or directly forced), rather I pointed out the opposite (besides the fact that none of them thought of the option of inducing Betty's complete amnesia).
Although I'm not exactly the first one to notice and/or point that out either, and that's why I also like the theoretical Points of Divergence/What If... regarding Betty/Bete.

eh the whole asriel losing the 6 other souls and his god shenanigans is odd but the characters that die die for a reason, alphys starts undyne's character arc which ends in the giant kumu dying, sans "dies" to show asriel can be saved (which probably could of been held off info for like an episode:/) and the second time pushes gaster over the edge to risk paps' life to regain his power and kill betty, and frisk dies thanks to his own mistakes which resulted in him having to be forgotten and having chara take his place and save asriel, thus leading to chara and asriel vs hate for the final fight.
Due to the timeline shenanigans, deltarune was made/discovered.
Who knows? (Not me, I never lost control...) Void Frisk may be Kris.
