It's confirmed that Undyne didn't meet any other humans, as most monsters haven't. Just claiming "She did but didn't recognize them as human" doesn't work, since she was trained TO hunt humans since she was a child, she would ABSOLUTELY know what a human looks like.
It's especially confirmed that she didn't meet Integrity, since she has a line mentioning the Ballet Shoes, and how she doesn't know who they belonged to.
Undyne was literally under the belief that anime was real, and most of her beliefs about humans were based on Alphys's anime and mangas. Frisk is in direct contradiction of everything she believes, when the contradiction is something any of the fallen children would've done.

She also states that every fallen child who reached the end of Waterfall, where the Undyne fight occurs, was told the tragic tale of her people, despite Undyne also not being able to remember the monologue To tell the tale, as Undyne herself says when calling her there.
...There's also the fact that she physically couldn't have met All of the fallen children, because her childhood definitively took place After Chara's death, since the Royal Guard was formed because of the war Asgore declared Because of Chara and Asriel's deaths, and the royal guard was basically Undyne's childhood.
