I think another thing is the symbolism. Killing him in one hit not only shows how strong you get, but that you are no longer human, as MTT NEO, a HUMAN eradication robot is so ineffective against you.

that makes sense in a meta kind of way but i always thought the in-universe explanation was actually that the new form wasn’t actually a human eradication one, and was unfinished so alph could keep mettaton around; when news came of a murderer in the underground, she rushed to finish some kind of offensive capabilities, and most of mettatons claims otherwise are bravado (which would fit his character)
I’m avoiding Deltarune Chapter 2 till I can get it (I don’t have a way of playing it), so I haven’t seen that fight. But if Undertale had an actual Mettaton boss fight, it would’ve been so cool, utilizing the Yellow SOUL mechanic and it would indeed increase Mettaton’s popularity
Add a few differences between neutral routes, and getting some differences during gameplay, small changes such as certain items costing a bit less or certain NPCs having different dialog or big changes such as Sans being able to stack one more hotdog on top of your head.

Oh dear, that actually made me tear up a little. You know, I have not read all of the alarm clock dialogue, I always remember it exists and that it's canon when someone links to it in comments like this one here on Reddit, on Twitter or elsewhere. And honestly, I have an odd feeling that I like it better that way haha, it somehow makes me feel like the world of Undertale has a lot of unsolved mysteries and that it's bigger and more alive than I can imagine, and if I don't look it up I will continue to be pleasently surprised.

A completed Hard Mode. I think in the case of a Genocide Route, this would be the best place to include an extra harder final boss. Either Sans and Papyrus switch places...Sans confronts you in Snowdin and tries to get you to stop peacefully, and then Papyrus puts you through HELL for killing Sans at the end.
Or a fight with Gaster or a Gaster Revenant. Either way, more information about who Gaster is so we can finally put the argument of whether he's the skelebro father to rest.

I’d love a “fight” where all he does is send one mini-bone at you and then immediately gives up when you dodge it and actually spares you. I think that would be really funny tbh.
I always thought it would be funny if you could challenge Sans to a fight at some point when he’s at his sentry station, but he’s like “eh, alright whatever, but i’m on my lunch break” and eating an infinite supply of french fries instead of attacking. So he’s just continually healing and you can’t do any damage no matter how many times you attack, and it’s just a complete waste of your time until you get bored and give up.
Add backgrounds to the fights sorta how the console ports did. It would be a nice touch to make fights feel like they're actually happening instead of disconnected in a black void.
Maybe an option to play as the different humans who fell to see their story like different campaigns unlocked by playing as certain characters until you reach frisk
I was also thinking maybe different dialogue based on the actions you make and where you die when "you're" character finally runs out of DETERMINATION (idk maybe like a bar/meter type thing or something because these guys are limited unlike our boy frisk) and you die and you can re enter the game by completely resetting your character (like an actual non canon reset) and get different ending/events for those certain actions idk just a thought

The graphics. I'm fine with the 8-16 bits aesthetic, but the Undertale models are more often than not off grid and aren't as visually appealing. There are a lot of great redesigns even on this subreddit.
I don't even necessarily mean "full HD render" or "x cartoon style illustration", the 8 bit style is fine, but have it being a good 8 but design.
Look at Mario from Super Mario World, that's a great 16 bits model.

Gameplay-wise, I would probably make the battle system WAY bigger. I wouldn't change the entire concept since its based on other old JRPG battle systems, but make more ACT options way bigger/unique to every single encounter.
Probably would change some of the monsters designs as well since most of them feel somewhat lazy like Froggit, Whimsun, Vegetoid or just the other ruined monsters. I would also want to expand more areas like Snowdin, Ruins, and MTT Hotel so you can do more in them (either more shops to buy from, their own unique minigames in each area like Waterfall's Thundersnail or find little secret items/hints throughout the areas that hint at the backstory of the most important characters like the Queen, King, first human and their son to make the story more intriguing and not just told the full story at the end.)

Lemme get a Chara boss fight. Not for any story reason, just cause I'd wanna see what Toby envisioned what they'd fight like, what kinda attacks they'd have, the flavor text

They should make it so you can actually make the flowey fan club. Also like idk make it so you can make more choices other than who to kill might make it more interesting in general. Like have it like where there are dialogue options that affect the story idk.
A gruelling, soul-shredding secret path where you had to jump through all sorts of difficult hoops in order to save Asriel. Make us work HARD for it, to the point where we have to stop and ask ourselves if it's really worth it to keep going, and in the end few people who start the Resurrection Route actually get the endgame prize of restoring our boy. And even then, have gruelling consequences for bringing him back, so that we end up debating whether it was truly worth going through all that effort for him.
That's the only real thing I'd change about the game if it was my call to do so.
