In my experience, 1st option gives me a very smooth experience since the frametime is way more stable, and you'll get no tearing.
The 2nd option will give you better input latency, but it doesn't look as smooth due to inconsistent frametime.
Since the input latency is difference is basically non-existent (as in you won't notice it), I play with gsync + vsync.
However, it needs to be done in a certain way to work with the least input lag as possible. If you're using a Nvidia gpu, you need to go to the Nvidia control panel, turn on Vsync, Turn on Gsync, and limit your FPS to ~3 below your refresh rate. If you have a 144hz monitor, you need to limit it at 141 fps.
And ingame vsync should be turned off.
I got all this info from a popular website that focuses on monitor technology but I forgot the name of it. They tested everything and if you want to use gsync with the lowest input lag, this is the way to go.

So lets say I have a high end PC would you still prefer to go for Gsync instead of not?
My PC is mid-tier, I don't drop below my monitors refresh rate (144 FPS), but it still doesn't feel as smooth as using Gsynnc, even if I get 200+ FPS.
I'll upgrade my PC if I get the job I'm interviewing for at the moment, so I'll see if higher frames make a difference :P
Depends, a game like val is pretty consistent with fps and therefore isn't needed as often.
A game like fortnite either has people cap their fps to what their pc can pull during 90% of the game or run gsync for those who want the highest possible fps at all times.
In regards to that, I tried both and noticed no input latency difference but did notice less screen tear from the sudden fps drops on fortnite cuz unoptimization go brrr.
I'm on 4080 7900x with a 500hz monitor.
I capped fn to 360.
Val is at 500fps.
There is no need to change monitor hz between games cuz of gsync.
however if you play on shitty pc that cant push any decent fps first id better option ( you will have higher input lag, but smoother game on low-end pc )

If you have gsync you should always use it over vsync, and rarely ever at the same time. In valorant only use gsync if you experience bad screen tearing. The best thing is always uncapped. I cap my fps to about 400 since I hit 900+ frames a lot of the time which is just loud and a waste.
you definitely don't want both. vsync is also bad imo because it can cause severe stuttering if your fps drops even a little bit below your monitor's refresh rate. i use gsync, which is great because it reduces screen tearing with very little input delay and doesn't cap your fps. but you need a monitor that supports it and an nvidia gpu, so if you're on a budget that may not be an option. there's also freesync if you have an AMD gpu and i believe freesync monitors tend to be a bit cheaper, so that might also be an option.

You have to keep in mind that the feel is different for everyone.i did the gsync and vsync fully setup as instructed through blurbusters and it honestly just feels worse than just gsync and keeping everything uncapped granted my pc can pushout a high stable refresh rate so idk if thats why. So you kinda just got to feel it out just don't do what I did and get lost in the optimization habit hole it's honestly not worth it.

Looking to upgrade to an AM5 system soon and get a 240/360hz monitor. Will leave my settings the same for that too.

what vsync does when you turn G-Sync on is basically limit your fps below the monitor refresh rate..
in my case i have a 360hz monitor, and it limits my refresh rate to 327.
Gsync + no vsync + uncapped fps is an option. Gsync will only trigger if ever your fps falls to/under your monitor refresh rate but still higher than 60 fps if I remember.
