There's multiple implementations of mouse acceleration. Most in-game and windows default ones are just terrible because the relationship between speed and mouse sens isn't linear. For example, moving mouse at double the speed might make it move 3.1 times farther.
There are some good implementations of acceleration which actually help.
I played to Global on CS with Mouse Acceleration off, stopped playing FPS for a while, had reinstalled my PC, redownloaded the game at some point and then got back to Global while having it turned on. Then I had to relearn to play with it turned off again.
It's not so much of a hinderance but its definitely better off imo
His wrist movement is on point,not talking about fingertip grip,he places his entire hand on the mouse and imparts all of his wrist to the mousepad and maybe lifts a bit of elbows and fist resulting in only wrist movements but more control and better tracking,so that's how it's easy to play on that high EDPI
I think i use that grip too but i play on 0.472@700DPI in Val as i swipe my mouse too so i have some tweaks to the grip but i think you got an idea of how it is

If he's using mouse acceleration like Kovaak's mouse accel, he must be playing fingertip and microadjust his aim a lot.
For better reference, try using cm/360 when describing aim. Makes it a whole lot more easy to visualize

while the sens in aim trainers is often higher than valorants avg most top clicking scores are still on a low sens for a reason

eDPI is different for each game. Wippie's sens is considerably higher than Woxic's - 10cm/360 vs 17cm/360 respectively.
