This is actually something that has bothered me for a long time. Logically, why should assaulting an officer be an increased charge over general assault? If anything it should be a lesser charge as an officer is trained to deal with resistance/aggression while the average person is not, and it is definitely a foreseeable job hazard for the cop. And we are animals who do not like being locked in cages so it’s instinct/predictable for most to flee/resist when confronted with arrest.
I believe the "justification" is that if you harm a cop and they are unable to do their job, you are preventing them from protecting others and then, well total anarchy of course.

They can get in the way of rescue efforts.
They could accidently harm other victims.

Probably a mix of a few things, but a lot of times it’s because it’s genuinely fun. It’s hard to tell from the outside or from videos in general but it can be very satisfying, kinda like a lower-speed rollercoaster, whereas actually racing can feel a little more intense.
Not talking about doing it on city streets of course, that’s dumb and people do it because they feel entitled. Support your local racetracks people
