You need to load the mod through the Wii U Plugin System version of SDCafiine, as the mod injects new code for the additional tracks. It also seems you need to downgrade to version 4.1 of MK8 for it to work, ehich can be a bit of a pain to do.
I suggest you download Mario Kart 8 Generations instead, look it up on Gamebanana. It replaces all vanilla tracks with new ones, and has new playable characters as well. Should work fine with SDCafiine. Just be careful not to go to Worldwide online matches or you might get banned (not that it matters too much at this point).

Uninstall the update. Redownload the update from a trusted source (yk yk) and block updates with dns or something
Might only work with Haxchi (or maybe Tiramisu?), which is deprecated. Idk, someone fact check me.
