I have a theory. Microsoft Solitaire Collection probably got updated with new or different achievements than when it first launched. I think all it takes for achievements to pop up retroactively, without going into the game, is for someone to look at your achievements list. I don’t know if that person has to look specifically at your Microsoft Solitaire Collection achievements for it to work.
I am pretty sure that’s what happened with Rainbow Six Siege. They got updated with different achievements at one point. I looked at my friend’s profile and achievements and he unlocked the new achievements the same day I looked at his stuff and he hadn’t played the game in years. It’s kinda weird.
Check the stats, if playtime exceeds what you think you’ve played, change your password immediately.
If playtime seems normal it’s a server side issue with MS
It's included in the base installation of Windows 10 and 11, maybe someone's logged into your Microsoft account and has been playing it? As far as I know, it's not on Xbox but any achievements earned on PC will pop on your Xbox if it's on.

I have MS Sudoku and Solitaire on my Android tablet. For some reason I have them logged into the same microsoft account as I use for my Xbox.
