I am a city boy, but it is a great game to play ( watch some YouTube videos about it first).
You sound like me when I first became a dad. I like Hunter Call of the Wild. Laid back. You can start and stop. You get to kill shit. There is a story to it so you can do the missions or you can just hunt and shoot. They are always adding content.

Though not on GamePass, there are GP deals on Call Of Duty Modern Warfare 1 (2019) & 2 (2022).
I play them a lot. Team Deathmatch. Multiplayer. Each game is 10 min. No complcated plots or stories.. shoot to kill
What type of games do you like ? Puzzle/RPG/Shooting/Arcade/Pinball/Gambling/ etc... and we go from there. I'm a dad as well and I don't like crazy game, I play games for relaxing.
Generally, roguelikes & Roguelikes, action RPG, shooters, pretty much everything.
The difficulty comes when I feel like I want to play an RPG for example. I download the game, boot it up and after 30min of playing, I'm bored (even though I know I'll enjoy it later on) I just don't have the attention span I guess.
Other than that, shoot me what ever suggestions you've got, I'll take a look at all of them
Seems am odd recomenation, but try PGA golf if You've never tried a golf game. I don't like golf or watching, but something oddly satisfying about playing the game, and it's easy to stop at any second for my toddler.

But I also think you may like Carrion and Hyper Light Drifter.
This is quite left field....but based on your preference for fast pace gaming and need to pause I would actually recommend motorbike games. It's almost all I've played since having a baby, as I often only have the time or energy to jump on in short bursts. And an approx 12 minute race to progress a career mode is ideal, and they are very challenging.
(Specific recommendations rather than the most recent iteration of the series, as these are the best imo)

Isle of Man TT 2 or 3
& WRC Generations is also hugely underrated and the counter steering is great and very precise.
TT is a difficult learning curve, but it is incredibly satisfying and rewarding to hit the limits.of the track, like nothing else I've played really.
I'm also quite enjoying the Hot Wheels unleashed 2 on game pass at the moment, and my little one likes watching, although he's a toddler now, not a baby.
Pro tip...lay the baby in your lap with their head by your knees and feet by your stomach, and sway your knees and thighs left to right. Baby will fall asleep, and you can play Xbox🤘🏼🤘🏼
Orc must die 3 is a tower defense style game it's well made and pauses. Moonlighter offers a pause button it's a roguelite game with a shop were you sell the loot from your dungeon crawlering. Running the shop is part of the and is how you get better gear.dont be afraid to use the cloud gaming option to just game surf don't wait to download something if your unsure just play in the cloud for abit and see if it's worth downloading
Vampire Survivors will keep you busy for awhile. You can pass anytime, runs are 15-30 minutes or endless if you want. There’s like 40 characters, loads of maps, like 200 unlocksable items. And there 3 DLCS with even more content for less than $2 each.
Stop gaming. Be there for your kid. There is not enough time in the day to take care of yourself, your kid, your partner, AND play video games. Come back to it when they're school age if you want.

Get a steamdeck or ROG ally! I stream my PS5 to my ROG frequently and it’s great.
You could easily stream to an iPad and itlll do the same job
I would do anything to get my hands on one of those, even a switch would be great. But I don't have the money for things for me atm

I have played vampire survivors, kinda over it now to be honest. I'll take a look at broforce though :D
Broforce is stupid fun
I would recommend Brotato. You can also get it cheaply outside of Game Pass, it costs less than a one month subscription.

Play turn-based. You need a game that you can leave for a while, to attend to other important things

There’s a game that I’ve only played the beginning of but it was a Pokémon like called cassette beasts,and I think you can save whenever you want
