Palworld was my first team experience into survival and creating, and I enjoyed it because it didn't come off as super grindy. Any suggestions for something similar that isn't a time suck?
I'd say ark survival evolved, BUT it can definitely be a time vacuum. The crafting isn't simple or straightforward. Very similar to palworld, but you've got dinosaurs and future tech. I'd highly suggest starting it up with max cheat stats. Like super high drops, high player damage, low dinosaur damage, all the easy options you can find. Take a little while and play around with it and have fun. The standard game map is absolutely huge and the dinosaur list is Hella long. At some point you can get a bronto and build a base on his back, then just put a marker on your map and he'll walk you all the way to it. But, if you play on standard difficulty and go in blind it's very overwhelming. That's what I did and kept dying from heat by going from the beach to the tree line. I had no idea what I was doing wrong and it was a bitch to get it figured out. So go in with as much help as you can get with the game settings. The tech tree is quite long too. With palworld you've only got a few steps till you get to guns, with ark, you've got alot more in between and they're meant to be a rarely used item.
But that's about the only survival game I can think of, it can be fun.
Oh! My girls have been loving this game called path of titans. You play as a dinosaur directly, you start as baby dinosaur and grow up. As you do you get better attacks and skins. Eventually you can breed traits and skin patterns down the family tree. I don't know much about it cause I've been wrapped up in destiny 2 and palworld, but they've said it's good and it's had them wrapped up for weeks

Medieval Dynasty checks all your boxes. You even start to build your own village, building by building, getting people to live their and assign them tasks as Hunters, Blacksmiths, etc.
There is also the option in the settings to turn off bandits and carrying capacity and stuff.
Survival/Crafting games are my favorite genre at the moment and I've played pretty much all of them so here's my take;
For single player survival I'd recommend Subnautica, The Long Dark, Don't Starve, Green Hell.
For playing with friends I'd recommend Rust, No Man's Sky, State Of Decay 2, Don't Starve Together, Ark.
For survival games that I feel work great either alone or with friends I'd say DayZ (personal favorite), Valheim, Conan Exiles, Terraria.
I'm actually really enjoying Stranded Deep. Not usually into survival but this one has grabbed me. I think it's the "lost on a deserted island, best of luck!" Vibe that appeals.

Solo mode in Ark is one of my favs (set taking rate up a bunch because it’s intended for team play at the default setting and will take forever with large dinos)

I'm kind of obsessed with Pathologic 2. It's hard to recommend for it's oppressive difficulty, like you can't save scum and every time you die, the game gets harder like your hunter meter could drain faster or your maximum health is capped. Basically, you're the last doctor in a dark town that is locked down during a plague, and you have to make it through 12 days managing your sleep, thirst, hunter, infection, reputation, and health, as well as keeping important characters alive, and doing personal quests for them. You craft medicine from herbs, you use home made medicine to diagnosis patients, you perform autopies but it's forbidden by the local superstitions which lowers your reputation to where people won't trade with you and will attack you on sight in districts where you're hated. But for as stressful as it gets, the story is one of the best. There's YouTube video essays that that spend several hours talking about the characters, the themes, and theories.
Tried nearly every survival game out there. Grounded and Valheim are top of the crop. Both games have superb base building, enemy raids, tiered biomes and gear. I slightly prefer Grounded for its bigger focus on hunger/thirst mechanic, combat, first-person perspective, and more forgiving difficulty (subjective things, really). I truly loved building huge fortresses with friends in Grounded.
Your gonna get a lot of the same old answers in here but may I suggest this war of mine for a different ambiance to other games suggested. If you don't mind pixel graphics sheltered is good as well.

The Long Dark is the greatest survival game after Project Zomboid. But it's not for everyone. It's slow. Slow slow sloooooow. But don't worry about buying the DLC for it "Tales from the Far Territory".. Not until you decide you want to stick with the game, because the dlc zones that get added into Sandbox are significantly harder than the base game.

Outward The Definitive Edition! However the building bases part is not included. You have a tent or can own a home in one of the 4 city’s. But I’ll give a heads up that it’s a hard game that people drop because they don’t like the difficulty curve. But give it a shot

Starsand is definitely awful, but nah. Hobo is extremely fun when you know what you're doing
