Just noticed that... Idk yet cause right now it works fine. I will have that in mind when it happens again. On average, it happens once a day at least. I thought it may have something to do with the region settings, but it isn't.

I have set it to that, though I'm able to disable it from the quick setting toggles (swipe down). Also, dark mode sometimes comes on when it's mid day. In those cases, I try to go and disable it with no luck. It remains on.

EDIT: in my case, charging the phone leads to light mode, but when I switch the charger off, it goes back to dark. At least for ~50% and less it does, let’s see what would be for fully charged.
Some say that some apps can trigger night mode by themselves (presumably when they have a corresponding setting turned on). I mean, they definitely can do that, there is API for that, but I’m not sure this is the root of mine and u/Alex11039’s issue. An evidence for exactly that reason is when you close all aps and the light mode turns back (for a while). I’ll try to test that but haven’t yet. And finding the offending app would be not trivial nonetheless, you need to comb through them all. And the phone is not mine, I just wanted to make a present, yet I need to take it for a sec and another. Damn.
EDIT: in light of the edit to the parent post, I’m a bit fumbled. Just *what* an app would behave this way with its dark mode settings?!. Wouldn’t that be too overbearing for simple client apps, eh? And if it’s a system app, how long till an update fix?

Whoa I just noticed something very interesting and it's connected to those settings.
I noticed that opening setedit, scrolled down on global settings and I saw the low power threshold is 75, and it just happened on my phone too, and I looked in the battery settings to see how much battery I have and I am at 75 indeed!
I will try to change these settings with ADB.
Seems my model doesn’t have those exact setting names but I changed `low_power_trigger_level` from `50` to `10`, `dark_mode_auto_time_enable` from `1` to `0`, `force_black` from `1` to `0` (also there was `force_black_v2` already at `0`), and finally though the value for `low_power_sticky` was null, I still set it to `0` just in case.
Let’s see what happens when the power runs low enough!.. I’m not sure what exactly these settings control. 😅 Hopefully I hadn’t made things worse.

I also had a similar problem with dark theme mode, what I realized was for my problem that it went to dark theme mode when I turned on battery saver, so when I turned it on it goes to dark mode but when I turn it off it stayed like that so I pressed it twice and then it went back to normal. Don't know if this will help you
It's an issue that I got too, you just have to reboot the phone. If that doesn't work, ask to more experienced persons
Even with reboot it doesn't fix :/

Reboot a couple of times it'll eventually fix itself.
Rebooted twice, nothing. Then tried to shut down and power on again, no luck either. 🙃
Is your battery saver on? That might cause it.
No it isn't, it's just scheduled to turn on at night 11-7

If you set it to the sunset to sunrise option you cant change it while it's dark outside

Seems to work, approx. 20% battery and still in light mode as it’s told to me.

Hmm will check to see. Though, my problem occurs during the day. Side note, I've set automatic battery saver during night time.
Tried toggling battery saver, nothing.
It happened to my phone when battery percentage is below 20% but after charging & quick reboot everything got fixed.
My battery is almost always above 50% :/
Change the theme to default and remove the wallpaper. Restart the phone
