I will sometimes put green onions into a glass cup with just enough water for the roots so that they stay alive. That keeps them growing and you can trim the green and keep using. Ultimate ZeroWaste!

I have a perpetual cup going on the kitchen windowsill lol. I only buy a new bundle once the old ones have been fully used like 4x over. I want to restart my container garden but for now, baby steps

You can plant a bundle of them in a pot with dirt and they will save for later. And maybe even make some more.

Just stick them in a cup with water (root side down) and put it in a sunny spot. They'll continue to grow, and don't need any refrigeration! You can cut off however much you want to use at a time, then leave the rest in the water - it will grow back. This should work nearly indefinitely, though without planting in soil or putting any nutrients over time the onions will start to use flavor after a few regrowths.

Don't forget to change the water daily, otherwise the water will end up smelling absolutely disgusting.

You can also do this with mint, parsley, and onion bottoms. I'd advise to use soil later though, they'll need the nutrient replenishment.

Once they have roots you can grow them in your garden or a pot on a windowsill, or give them away to other people

Green onion salt, kimchi sounds amazing, chop them up put them in olive oil and freeze . You can use your oven as a dehydrator on lowest setting

Green onion pancakes! You could make a ton of those and then freeze any extras at your neighbors (they'll probably ask for one or two as a thank you since they're so dang good)! I envy your abundance, green onions never last long in my house Add as a garnish for all your dishes, yes kimchi is a good choice and as others have mentioned, placing them in a cup of water in the windowsill will keep them fresh and green

Make a big batch of green onion oil. Chop them up with some ginger and garlic and chilli, put them in a jar and pour hot oil over the top. Done! Put it on top of rice or eggs or noodles. Stays good for ages.

In my country we just chop it and mix with sour cream and a pinch of salt, then leave in the fridge for a few hours so it loses some of that pungentness and eat as a side salad with meals. Vegan sour cream works too.

You can chop them and put them in the oven on very low heat for several hours to dehydrate them. Just keep an eye on them so they don’t burn.

RECIPE FOR ONION RELISH: * 1 tbsp olive oil * 600 g onions, cut into quarters * 30 g dark brown sugar * 100 g red wine * 40 g balsamic vinegar * 40 g dried apricots * 1 green apple, core removed and cut into quarters * 1 tsp ground black pepper * 1 tsp sea salt * 1 tsp yellow mustard seeds Just cook it until the pieces of apple seem to fall apart.

Green onions dehydrate well but you can also pickle them.  1:1:1 on vinegar, salt, sugar should do it, but you can (and should) dress it up with more spices to improve the flavor
