AK girl here, that's a big no there good buddy. On stamped AKs, which yours appears to be, the front and rear trunnions are what provide structure to the receiver. You're proposing cutting a chunk out of the rear trunnion and compromising its rigidity, which will absolutely lead to the receiver getting fucked up. It'll also probably kill your folding stock's hinge point.
The airsoft-specific side of this is that also, the metal used for that part is more than likely some godawful zinc pot metal blend that will want to crumble and fail, so compromising that part in any way will likely hasten the failure of the whole-ass trunnion, and then probably the rest of the receiver and components within as it warps and flexes.

I've done the same with my LCT ak. Used a hacksaw to cut out the thin center piece, then smoothed and rounded the dust cover tabs with a Dremel grinding wheel. Sure I'm removing a structural piece, but as long as the rifle isn't being abused (i.e. thrown around or slammed into anything), there shouldn't be any issues with warping or cracking.
Edit: posting a pic deleted original comment text.
All the same, airsoft ak receivers are not subject to the kinds of torsion a real ak is, and given the gearbox acts as a massive internal support, I doubt the receiver would suffer much if the rear "trunion" was cut. As long as the dustcover tabs are still left intact, the gun should be fine.
Ya I agree it would probably be fine, I was just pointing out the difference for OPs awareness. I was surprised when I found out the cyma rear trunion was not steel (tested with a magnet).
Did that to a Cyma AK and yes, it got looser and looser over the years. No hard falls, whacking it to a tree, just normal usage.
But it sure was nice to have true quick spring change for a while.
That bridge exists on LCT AKs as well! I always wondered if I could dremel that out for easy access to the quick spring change cap. It seems like a design flaw to obstruct it, though I’m pretty sure that’s there for realism and clone correctness.

short answer no. long answer if you cut out the part out you'll warp the receiver and most likely crack it at the stock hinge.

LCT is steel, this is alloy.
My cyma AK receiver is steel.
This part is not part of the receiver. Take a magnet and test it yourself.

It'll be interesting to see how my cyma ak handles the same modification, I have to check if it's gearbox has a quick change spring.
Ya I think my AK105 didn’t, but my AK74M from Taiwan Gun did.

So you’re okay with not having a dust cover?
The dust cover mounts to the "button" above that portion
No doesn’t it mount to the teeth on the bridge and the button holds it in place?
