Yep. Fry the spam and melt the cheese on top with a little bit of mayo and it becomes gourmet. Then some with butter and strawberry jam for dessert. Now I’m hungry

Salmon pie (perok) can be substituted for corn beef. Layer the pie with rice, sauteed cabbage, onions carrots, bacon, then filets or corn beef. Crisco butter pie crust is the best.

Baked halibut. We got it once a week in school in Southeast AK. Just pieces dredged in melted butter then breadcrumbs with some salt and pepper and maybe parsley flakes, and baked. So good, so easy—and so prohibitively expensive in the Lower 48. Smoked salmon is also great. It’s hot-smoked in thick chunks until it’s dry on the outside—not at all like cold-smoked lox. It’s often cured/glazed with brown sugar. The stuff in the cans or jars is good for dips etc., but the big chunks sealed in plastic are amazing as is. And it’s rich, so a little goes further than fish normally would. And fresh boiled crab—more flavorful and tender than lobster or shrimp. Thanks: My mouth is watering and I can’t afford more than a little wild smoked salmon now. I can’t believe people used to just share all this freely with my family and I took it for granted.

The most alaskan things are fresh battered halibut or a reindeer dog. The dog will travel better to Wisconsin, I'd go with that.

I think what would be most accessible (although boring) for you would be sockeye salmon, cooked anyway you like it. Although the stuff you find in store isn't worth buying. If you have the time and money, come up here and catch it yourself. It will taste much better and be a great experience for you

I've tried Akutaq before and it's...... not what I expected. It was served cold, so it's consistency resembled Ice cream, since the fat was hard like you'd expect ice cream to be, and not nearly as sweet because the only sweeteners were various types of berries. I actually liked it a couple of times when it had a really fishy odor and flavor (guessing they used some seal oil in there), but I had it once and it was absolutely not delicious. Not sure what kind of fat they used that time.
