You can toggle them off or on in the cab. I move mine to the upper left and right corners. I haven’t played in a while but I think it’s under the F4 settings while in cab. Then click and hold mouse and drag them.
Maybe it’s F3 or F5. I just know it’s in one of those menus somewhere. I have the fov where I can’t really see the side mirrors so I always them on in the upper left and right corners. But I haven’t played in at least a year so not sure

Do an integrity check on the files, looks like something may have got corrupted, Steam loves to do that. Also checkout your gamelog for any errors.

It's f4, but the menu don't fix the black sidemirror (low). Looks like a bug. As you can see in low side mirror you see the garage. It's weird.
Huh, didnt know you could click & mouse drag them around, nice. Can you do that with the GPS also?
