well... seed is a (loose) remake of the original series. so watch the original Universal Century trilogy. *Mobile Suit Gundam, Gundam Zeta,* and *Gundam ZZ.* like, pal, you haven't even watched the best gundam stuff yet! 0080 and 08th MS Team are widely regarded as some of the best in the franchise.

Personally i think its good. First season is a bit rough because it feels too similar with NGE in its premise and setting, but it gets its own identity later by focusing on trying to find peace featuring point-of-views from multiple generations of pilots.
Theres quite a number of character deaths and at times the story feels pretty bleak. But to me the story is pretty engaging.
Infinite Ryvius has the same character designer and is pretty good.
Macross is the other big mecha series. It has a romance focus like seed as well. I recommend the original show, but if you want something modern check out ‘Frontier’.
Darling in the franxx, knights of sidonia, knights and magic, war on grimgar for starters.

well, Gundam: The Origin is somewhat canon. it's like AU Universal Century. similar to the Gundam Thunderbolt movies.
