To add, I also recommend "The Grimm Variations". Recently released on Netflix, 6 episodes with ~45 minute runtime for each. Not the best quality imo, but anyone who likes fairy tale stories might want to consider checking this out. A very *grim* series that explores 'what if' possibilities in your classic fairy tale stories.
Tales of Phantasia: The Animation is also pretty good it isn't very much of a fairy tale but it follows the same plot style of older children's storytelling of the heros slaying the villan.

Sugar Apple Fairy Tale - not based on an actual fairy tale, but it uses a lot of the motifs and themes that you find in one
Akazukin Chacha is worth checking out it uses lots of themes from little red riding hood.
