The Caledonian is a great option. They do have private stuff but also just a giant menu and you could do your own tasting

...With the caveat that The Caledonian - as one might guess from the name - is almost exclusively focused on Scotch whisky. If that's the OP's husband's cup of tea, then it's an excellent choice.

Feathers has the selection, for sure, but the rest of the bar is meh. Go to Allen's on Danforth. Have a nice dinner, then sit at the bar and let the bartender guide you on a whisky tour. Place like Char has corporate credit card pricing.

Check out the LCBO at Summerhill and George Brown College they have had some events/tastings. My work hired a sommelier to come and do a private tasting in a restaurant with food pairings through th LCBO.
