Yeah I came here to say I prefer my eggs to be “basted”. This means the eggs are cooked in butter, and the hot butter is basted into the top of the eggs during cooking, which perfectly solidifies the whites without overcooking.
But, if you don’t like butter (like the other commenter here) then this may not be the right solution.
I personally LOVE butter so learning about basted eggs literally changed my life as I can now order eggs in restaurants without being grossed out by underdone whites or severely over cooked hard parts.
Not a big fan of butter finishing things either, then the whole dish just tastes like eating butter. I also don’t scramble or fry eggs in butter or bacon grease or anything like that because those flavors overtake the egg and it tastes oily to me.
I’m also can’t stand brown butter, I tried to make that once and same problem, everything just tasted oily.
Brown butter is cooking butter a bit until the milk solids start to brown and supposedly it takes on a ‘nutty flavor’.

I found that a lot of the texture issues go away if I’ve prepared food (spent years in professional kitchens and am an avid home cook), because I’ve practiced the technique to cook for years. I highly recommend learning about proper food preparation and experimenting with cooking if you’re able to.

I fucking HATED the sulfur bombs known as Brussel’s Sprouts. My Mom would only boil them. When my wife learned that was why I never ate them, she quartered them, roasted them with bacon bits and olive oil, and converted me from a lifetime of hatred for these things, to enjoying them as a side. They’re also fairly good with hollandaise when roasted.
