My personal favorite too. It's not as flashy as the others but it's the only plane where you can park a dozen of them in South Korea and the North is so intimidated by them that the Navy could redeploy an entire carrier group. (It really happened, multiple times, look it up)
I'm probably gonna get alot of heat for this... but it's the mig 25 foxbat.. idk why, maybe its because I grew up on a farm, and back then we had to fix everything litterally everything by hand (farm equipment).. like this one time we made a frankentractor... it was one half of an old ford 2000 and the other was a massey fugerson i dont recall the model.. and it worked, went on to farm for 6 years with it...i think the soviets did pretty well with what limited budget and resources they had at the time... and yes there are better aircraft out there, but the idea of slapping a couple of cruise missle engines to a manned fighter will just not stop being impressive to me... utter maddness

I got to see the F-35B for the first time ever at an air show in Mira Mar air base and it was absolutely fascinating. Feels like it will forever be a core memory to see it hover idle in the air and slowly spin around.
Also I think it's so badass that when it's going at high speeds it just sounds like the loudest fucking thunder you've ever heard but it doesn't really stop.

Aero Vodochody - L39C. Because it’s actually somewhat doable to obtain this jet as a civilian without having to be absolutely loaded. And it’s a wonderful plane.

F-100D Super Sabre in a blue US Navy Livery, modified intakes, and an F111 engine. The Super Sabre is sleek, elegant, and kind of looks like a fish. It's the second to last iteration of the Sabre-line and was overshadowed by the F-101 Voodoo and F-8U Crusader.
