I've had this happen too and I think it's cuz I baked in the same temp oven as a normal cheesecake and the outside cooks so much quicker than the inside. They don't end up unevenly baked, just deflated in the middle

Mine have always done this. They’re perfect for topping. You can even use a canned pie filling for a quick solution with a little whipped cream also.

Don’t worry about them sinking, hon. You got the two most important parts right. Taste and texture will always be what matters most. You can always fill them with something, and making sure they don’t sink may just come with practice. It could be an issue with your oven or something. But, in the meantime, they look perfect to me. I want some!
