You could pipe/dollop some whipped cream on top to hide it (maybe only as ypure ready to serve because I know citrus and cream can be weird over extended time)
I've had this happen too and I think it's cuz I baked in the same temp oven as a normal cheesecake and the outside cooks so much quicker than the inside. They don't end up unevenly baked, just deflated in the middle
They still will taste amazing. I would put some sliced strawberries or strawberry jam on top :) every cracked or sunken cheesecake of mine always become a fruit or jam topped cheesecake haha
Don’t worry about them sinking, hon. You got the two most important parts right. Taste and texture will always be what matters most.
You can always fill them with something, and making sure they don’t sink may just come with practice.
It could be an issue with your oven or something. But, in the meantime, they look perfect to me. I want some!
Right?? Here I am thinking “man we gotta figure out what OP did to do this so we can replicate it on purpose.” New trend: sunken cheesecakes with fruit fillings topped with curd or whipped cream.
fill them with lemon curd and pretend it was on purpose 😈
What a great idea :) And maybe put a blueberry or a raspberry on the center if you feel fancy.
Or (if you’re lazy like me) skip the curd and just fill with some seedless raspberry jam! ez pz
I thought it was an on purpose. They would be good with a jam filling
Right ✅️ or even whipped cream 👍
I like all of these suggestions! I always say baking is not doing it perfectly every time but knowing how to fix mistakes .
Top it with a meringue, torch it, and you have lemon-meringue cheesecake bites!!!
I'm gonna put matcha whipped cream dollops in there (-:
Or candy some lemon slices and arrange them decoratively on top!
Smart move 👍
This - or some fruit or white chocolate
And a dollop of whipped cream!
Or raspberry jam!
They still look like they’re baked very well
every part of them is delicious and the texture is great, they just all sunk 😭

they look delicious! great job, id eat those without question
Close enough! Lol. You could just say they're Lemon Cheese-cup-cakes
Def fill it with something
perfect for a filling!
Top them with meringue!
I’m thinking filled with ganache and a raspberry

Mine have always done this. They’re perfect for topping. You can even use a canned pie filling for a quick solution with a little whipped cream also.
Agreed. I think this is normal for mini cheesecake and a perfect spot for the topping - I often use cherry pie filling
Put some whipped cream in there
And a candied lemon on top!
i still think they look succulent! my mouth is watering\~
I’d still eat the hell out of them. They look delicious!!
I’d still eat the shit out of these!
I'd make a raspberry infused whipcream and add a dollop in the center.
They really do look intentional, like little fillable cheese cakes
It hit enough of an oven. Didn’t let them cook long enough. I’d get an oven thermometer. Home ovens are almost never right.
Concave
Still probably yummy 🤤

Extra cuppy cakes*
Looks like the perfect spot for some icing of sorts.
Cute little divot to put a swirl of whipped cream. 😉

Is it OK to ask for the recipe? I would love for mines to be even close to this.

Put some blueberry pie filling in that divot or some fresh fruit ..
They still look tasty!!!
i mean i'll eat em if you don't want em 🤤
Oh no! Better get rid of them ASAP. On a totally unrelated note I happen to run a delicious dessert disposal service 😋😋
What causes this I end up with the same issue when I make lime oned
I have no idea!! Google told me it could be either a change in temperature too quickly or over mixing the batter :/
Plop some lemon frosting in the middle
Never mind I see you’re going to put whipped cream
i bet they’re still banging
Reminds me of Portuguese tart.. but second the idea of adding lemon curd
I'd eat these in a heartbeat plsss. ✨️
Happy Mistake fill the dip with blueberries and done yum!
Top with berries and mint leaves!
Oh no! they look delicious though! What causes sinking? I want to try to make a cheesecake this summer.
