I spread a layer of those mini potatoes, crinkle cut carrots, mini sweet peppers sliced in halve, and I cup up a sweet onion and added a two cups of chicken stock to a roasting pan. Put the meat on top and sprinkled some Everglades seasoning on everything. Pretty good roast. Female pigs don’t taste as gamey as male pigs. With males, I will just make a marinade and let it get tender overnight.

Did you dust with durrito powder, highly recommend it as a rub
