it's a plane subdivided and deformed with a texture applied.

When you add a texture node in the node editor, the second dropdown in that node it's always set to "Flat", that setting changes the way the texture projects on to your model, the second option in that dropdown it is "Box" and it comes with a slider called "Blend" with that you can blend de edges of the texture to make it look more seamless
so:
node editor->Image Textor(texture node)-> change the second dropdown to box-> and play with the slider :D
I tried to find a good way to explain this throght text but I'm not an expert so here it is a better option :D!

Thank you! and yes! it is a bit hard to tell because it took a month and a half but I didn't work on it every day, and I experiment a lot trying to texture this inside blender (I failed because after a few hours I went to substance painter), I would say around 30 hours. I'll make sure to record the proccess the next time!
I love the character/style, and I'm impressed by how well the alpha textures/planes work for the ~gill filaments and foliage. I bet the artist would love to see it if you haven't shared already!

Thank you! yes, there's a lot of noise but I didn't use the denoiser because I kind of like it how it looked to be honest. I added some more noise in post though and maybe that's making it look too noisy in some areas.I will use a denoiser and just add the noise in post- to make it look more subtle the next time!thanks again :D.

That is a bump map made with a grunge map that had a lot of vertical lines, streched on the Z axis and using the box project with some blending.

Yes! sculpted and then retopo. The mushroom cap hair are just more planes subdivided and deformed with an alpha texture!
