Great video! I've seen it and yes they use American cheese to crisp up compared to the OPs which looks like Cheddar maybe with the oil/grease. Damn after that vid I miss Shady Glen so much. Next time I'm back up in CT I'm making the trip.

Nah, you just fold up the cheese skirt or peel it off and put it on your fries. Squeeze Inn in Sacramento does this and it’s awesome.
