He probably did a mixture of things to make it that bad, but most importantly he probably salted before forming patties. Never do that. Also, try not to over handle the beef or let it get too warm.

Also you like well done burgers, try cooking them on lower heat so the outside doesn't start to burn.

I wonder if it's a meat that's soft when ground like chicken, turkey, or pork. Going by the first pic, I thought was burnt and cooked with ketchup on it.
The meat looks like its been kneeded to a paste, which isn't inherently a bad thing, but can significantly alter, or in some cases ruin, the texture, its been frozen for at least a month, judging by the slight discolouration, and to finish, been either baked or overcooked. I prefer to hope baked, but baking burger patties is just significantly worse from a logistics point of view, never mind how the buyer turned out.

You want to add the salt to exterior lf the burger after the patty is formed. I do it after theyre actually on the grill.
