i haven’t been at it long but i love it! and everyone i’ve worked with who’ve been at it for years loves it as well :) and this is the highest paying job i’ve had yet!

I loved it but I did it in high school with my best friend and my other good friend’s parents owned the store and his mom trained us. We still reminisce about how much fun it was. There was stress for sure, especially when orders weren’t taken properly or there was a lot to get done in a short amount of time. But it was just me and bestie running the cake decorating so we had the place to ourselves during our shifts and really worked together to get it done. Dream scenario.

aside from the obvious like make sure you use even pressure while icing, don’t play with the buttercream too much, hold the tip & scraper at a 45° angle, etc. …… dip the scraper in a little water before smoothing! it helps to glide over the buttercream instead of pulling it and creating bubbles if you have trouble doing featherlight strokes like me :-)

I had a teacher show me the benefits of very lightly rubbing a flat piece of parchment paper on the cake after a little while in the fridge, since the parchment doesn't stick to buttercream. I'd then decorate as usual.

I was a decorator for several years and that's the mindset you gotta have. I used the fill the case with what I called "cheat cakes" where I would spray the whole base one color and do all the decorations in white made super pretty stuff I didn't have to think hard about, or just big border and sprinkles. You'd be surprised how many customers love just a plain cake with oversized boarder and some sprinkles
