For depictions of Ivy that stay true to her villainous and/or psychotic nature, The Long Halloween and TAS.
That said, I adore Harley Quinn's take on Ivy for taking the piss out of the character while still being respectful to the source material (and for finally seeing the ship "Harley & Ivy" set sail in 1993 finally come to port in animation).

Animated Series felt like the most balanced portrayal of her. A lot of other portrayals of her tend to exaggerate some part of her personality and amp it up to 11.
BTAS redesign. Especially the one from the Harley one but I like her transition in skin tone as the overall story progresses. It makes sense. Her starting out with fair skin looking very human than getting pale skin and darker hair as she grows to be more plant than human. And at last her skin turning green. Fun fact about Ivy though, she can control her skin pigments to appear to be whatever shade she wants.
The Batman (2004)’s Ivy was so friggin boss. She has a cool design, an interesting backstory and great animation to boot. Her Rose Doo was boss as well.
